Curry Paste, Thai

Fresh base ingredient for all sorts of delicious Thai dishes


  • 3 tbsp chili
  • 1 cup garlic
  • 1 cup onion (preferably shallots)
  • 1 tbsp lemon grass
  • 1 tbsp galangal
  • 1 tbsp kaffir lime leaves or zest
  • 1 tsbp coriander powder
  • 1 tbsp cumin powder

blend with oil (best for preservation), water or coconut milk to form a smooth paste
