How to turn overripe bananas into pure muffin gold
preheat your oven to 180°C
For 12 muffins. beat in a bowl:
- 75g soft butter
- 125g sugar
one at a time, stir in
- 3 eggs
add
- 35g cooking oil
in a separate bowl, mash
- 2 very overripe bananas
- 2 tbsp/30g lemon juice
add that to the batter with
- 190g flour
- 1 tsp/5g baking powder
distribute the batter to muffin forms. in a small pan, cook
- 2 tbsp/30g butter
- 3 tbsp/30g maple syrup
- 40g crushed walnuts
drizzle onto your muffins and bake at 180°C for 28min
