Baba Ganoush

Dip with a irresistible smokey flavor for flat bread or potatoes.


  • 3 entire eggplants

directly on medium heat open fire/amber/cast iron pan/oven until charred on the outside and soft throughout (no spongy parts!). Wrap them up in paper for a few minutes to allow the for easier peeling. Peel. Drain. Chop them up or blend for extra creaminess.

add in

  • 1 lemon, juiced
  • 5 tbsp tahin
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 clove garlic –or– 1 shallot, minced

optional toppings

  • coriander leaves, chopped
  • tomato slices
  • olive oil
