- 3 entire eggplants
directly on medium heat open fire/amber/cast iron pan/oven until charred on the outside and soft throughout (no spongy parts!). Wrap them up in paper for a few minutes to allow the for easier peeling. Peel. Drain. Chop them up or blend for extra creaminess.
