Fresh base ingredient for all sorts of delicious Thai dishes

- 3 tbsp chili
- 1 cup garlic
- 1 cup onion (preferably shallots)
- 1 tbsp lemon grass
- 1 tbsp galangal
- 1 tbsp kaffir lime leaves or zest
- 1 tsbp coriander powder
- 1 tbsp cumin powder
blend with oil (best for preservation), water or coconut milk to form a smooth paste
