Side for oven baked potatoes, falafel, bread or as dip for fresh vegetables
for about 800g of humus use
- 250g chickpeas
soak overnight or at least 6h; rinse well; change the water; cook for an hour (30min in a pressure cooker). They should be a bit overcooked and very soft throughout. Rinse again. If you got the time: peel chickpeas for best results.
Add
- 50g (10 tbsp) olive oil
- juice of one lime/lemon
- 40g (5 tbsp) tahin (sesame paste)
- 2 tbsp ground cumin
- 2 tbsp mild paprika powder
- 2–3 cloves of garlic
- 1 tsp salt
ideas for optional extras:
- roasted, pickled or fresh paprika
- sun dried or fresh tomato
- celery
- chili
- sesame oil
Blend everything with as little possible but as much water as necessary.
Garnish with e.g.:
- coriander (cilantro)
- mild paprika powder
- olive oil
- olives
- pickles
